Tonight we made a recipe called “Ten Minute Tasty Asparagus and Brown Rice Recipe” from 101 Cookbooks, and it was incredibly good! I think that sauteing chickpeas is going to be a new official favorite, it just gives them a much better flavor. The sauce for this wasn’t spicy at all, but it was refreshing and lemony, which was perfect for the asparagus. Two thumbs up.

By the way, do you read 101 Cookbooks? You should. All of her recipes are vegetarian, many are vegan, but I can’t imagine anyone not finding some great recipes regardless of your meat preferences. All of the food there looks delicious, and it’s also just an easy site to navigate. Highly recommended.

  • Breakfast: Nothing, which was a complete accident. I was hungry by 10:30.
  • Lunch: A vegetarian savory pie with vegetarian chili from the Pacific Pie Company. This was vegetarian, but definitely not vegan, as evidenced by the buttery pastry and the cheese on the inside. Oh well.
  • Dinner: Ten Minute Tasty Asparagus and Brown Rice Recipe from 101 Cookbooks
  • Snacks: Handful of almonds, some blue corn chips, a few pita chips with hummus
  • Drinks: Coffee, water, beer and wine
