• Breakfast: Oatmeal with brown sugar and dried apples
  • Lunch: PB&J and some flax seed chips and salsa
  • Dinner: Miso soup and a spinach salad
  • Snacks: handful of nuts
  • Drinks: water, coffee

This was our first attempt at making miso soup, and it was pretty good! More than that, it was super easy to make and only took about 20 minutes from start to finish. The recipe we used was this one from 101 Cookbooks.

So, you want to know something weird about being vegan that I never would have guessed? When you’re vegan, you use a lot of bowls. Crazy, I know, but completely true. Oatmeal for breakfast, soups and bean dishes for lunch and dinner, dips for vegetables, the list goes on and on. Our bowls are always dirty, and that’s a problem we never had before. We are currently debating buying more bowls, but in some ways I think that would only make the problem worse. We figured on plenty of major changes when we started eating like this, but that wasn’t one of them.
